Mandarin and Mascarpone Tarts
High in calcium and Vitamin C
12 pre-baked small tart shells from your local IGA supermarket
250g cream cheese or ricotta cheese
1 tbsp sugar
3-4 mandarins, peeled and as much pith removed as possible
1/2 cup apricot jam, warmed
- Combine the cream cheese and sugar together.
- Place a spoonful of this in the base of the tart shells and smooth them off.
- Arrange the mandarin segments on top.
- Then brush the tarts with the apricot jam and lightly dust with icing sugar.
