Ingredients

  • 12 pre-baked small tart shells from your local IGA supermarket

  • 250g cream cheese or ricotta cheese

  • 1 tbsp sugar

  • 3-4 mandarins, peeled and as much pith removed as possible

  • 1/2 cup apricot jam, warmed

  • icing sugar

Directions

  • Combine the cream cheese and sugar together.
  • Place a spoonful of this in the base of the tart shells and smooth them off.
  • Arrange the mandarin segments on top.
  • Then brush the tarts with the apricot jam and lightly dust with icing sugar.
